I think Bill was refering to the Jam style >> the ever changing setlists and the musical bridge's between songs and of course, their inovation of usually not playing the same song the same way like most bands did. [then]

i agree - that is why i made sure i phrased it with "could attempt" to make a case for....
you are right, the Allmans (although i do consider them a "type" of early jam band) - do not fit exactly what Bill was trying to say.
